Crust
- 1 1/4 cups (300 mL) vanilla wafer crumbs
- 3 Tbsp (45 mL) butter or margarine, melted
- 2 Tbsp (30 mL) Equal® Spoonful?
Filling
- 3 pkgs (250 g each) Lactantia? Light or Original Cream Cheese, at room temperature
- 3/4 cup (175 mL) Equal® Spoonful?
- 3 eggs
- 2 tsp (10 mL) vanilla
Crust
- Combine crust ingredients. Press evenly on bottom and 1/2in/1 cm up sides of 9in/23 cm springform pan. Bake at 325°F (160°C) 8 minutes. Cool.
Filling
- Beat cream cheese and Equal in large bowl. Beat in eggs, one at a time. Blend in vanilla. Pour into crust.
- Bake 30-35 minutes or until just set in centre. Loosen cheesecake from edge of pan. Cool. Refrigerate 6 hours or overnight.
- Serve with fruit and drizzle with Light Peach Raspberry Freezer Spread, if desired.
